I made another batch of our Cranberry Chocolate Chip cookies today. These cookies are the all-time guest favorite, and they are so easy to make!
1 cup brown sugar, firmly packed
½ cup granulated sugar
2 eggs (or ½ cup egg beaters)
1 tsp. vanilla extract
11/2 cups all purpose flour
1 tsp. baking soda
1 tsp. ground cinnamon
½ tsp. salt
3 cups oats (quick or old fashioned, uncooked)
1 cup dried cranberries
2 cups chocolate chips
Heat oven to 350 F. In large bowl, beat together butter and sugars until creamy.
Add eggs and vanilla, beat well.
Add combined flour, baking soda, cinnamon, and salt; mix well.
Stir in oats, craisins, and chocolate chips. I use a small muffin scoop to portion onto ungreased cookie sheets.
Bake 14 minutes (about 10 minutes for smaller cookies. Makes 27 large cookies, or about 4 dozen smaller cookies.
